Heritage flavours, contemporary execution: If you speak Korean, Nae:um's mission is clear from the get-go. The name, which translates as 'a fragrance that evokes memories', reflects the philosophy behind this fine dining restaurant, helmed by South Korean chef Louis Han. Reinterpreting the nostalgic flavours of his home country via Western culinary techniques and surprising creative twists, Han crafts exquisite dishes that feel both familiar and refreshingly modern at the same time.
For example? Rustic memilmyeon (cold buckwheat noodles) reimagined as haute cuisine, dressed with white kimchi, perilla oil and cured roe sauce, or dry-aged, pan-seared turbot paired with a buttery sauce inspired by maeuntang, a spicy fish stew.
A story-driven series: Nae:um's seasonal nine-course tasting menus are framed as 'episodes', each designed to tell the tale of a place, an aspect of Korean culture, or one of Han's own personal experiences. Past themes have included 'Jeju Blossoms' (starring ingredients from Korea's Jeju Island), 'Han River Sunset' (capturing a stroll along Seoul's iconic river) and 'Front Yard Barbecue' (conjuring the excitement and aromas of alfresco family dining).
Visually captivating fare: Tucked behind a traditional shopfront on the edge of Singapore's Chinatown, Nae:um is a minimalistic sanctuary of calm, cocooned in creamy colours and warm lighting. After all, why let the decor do the talking when each ethereal plate served is a canvas of its own? An open kitchen in the corner of the intimate space also draws the eye, allowing guests to observe the artistry of Han and his brigade de cuisine from their tables.
